Tonight wasn't just a return to form, it was the tenth anniversary of the first date between Laura and I.

Our first date was at a cute tapas bar named Six Little Bar & Bistro in Hampton, Virginia that closed many years ago. Actually, not long after we moved in together and started cooking aggressively. Come to think of it, I actually took a lot of first dates there, met Laura, quit going there, and they closed. That might not be a coincidence!

Tonight, I wanted to test out two things: one, I needed to re-exercise my cooking chops. I mean, Laura and I have been home cooking great food every night for several months, but we've limited our "elite cooking" to once every few weeks. The second things though was blogging about it. I haven't done this in ages.

Over the past few weeks, I've been vibe coding an app for Laura and I. Our typical battle rhythm is that on Saturdays or Sundays, we'd (well, me) manually input a bunch of health data from our Lumen breath analyzer, Withings scale, Oura rings, and Fitbit watches, then give some guidance about menu desires and use an LLM like ChatGPT or Gemini to spit out a menu. Instead, I wrote a collaborative app that does all that and so much more (builds shopping lists in Google Keep — if Instacart gives me access to their IDP, I'll add that feature too to auto build carts; remembers food we've eaten and blacklists it for a few weeks; compiles daily caloric intake from other sources like morning coffee and breakfasts, then helps build salads we prep on Sundays for the week and accounts for that). Laura and I now get up to 21 dinner suggestions a week that meet our requirements - things like "Monday through Sunday, low-carb, Mexican on Tuesday" or possibly even larger prompts. Then after a well tuned LLM action, we get suggestions we can modify (either slightly: "replace zucchini noodles with Palmini noodles" or complex ones: "switch this meal to something southern Indian"), then they expand to full size recipes with by-the-minute execution timelines that can be printed out in a PDF that auto emails to Laura and I or can be executed off the phone (with a wakelock to keep the screen on while cooking) and then the schema.org recipe format JSON-LD output which will go directly to a Google Nest Home device (and into these blogs).

So... That gets us to two things:

  1. This is the first entry created by the app to be blogged. The markdown below and the embedded code was built by my app.
  2. I took the original LLM suggestion and made some changes, then cooked this. So, this is what happens when I'm left unsupervised with AI. I make up stuff like this.

And wow. This was phenomenal. The only change I'd make after eating it tonight would be a switch from chicken stock in the risotto (and I did freestyle the saffron hydration process as well as the seasoning of the scallops) to a lobster stock, but other than that, when making this again, I'd execute this exact dish as rendered.

Ingredients

Proteins

  • 1.5 lbs Large Sea Scallops, meticulously patted very dry

Dairy

  • 1/2 cup Grated Parmesan Cheese
  • 4 tbsp Unsalted Butter, divided
  • 2 tbsp Heavy Cream

Pantry

  • 1.5 cups Arborio Rice
  • 4-5 cups Chicken or Vegetable Broth, gently warmed
  • 1/2 cup Dry White Wine (e.g., Pinot Grigio)
  • 1 large pinch Saffron Threads, steeped in 2 tbsp warm broth
  • 2 tbsp Olive Oil, divided
  • Salt and Freshly Ground Black Pepper, to taste

Produce

  • 1 small Shallot, finely minced
  • 3 cloves Garlic, minced, divided
  • 1 Lemon, zested and juiced
  • Fresh Parsley, finely chopped (for an elegant garnish)

Method

Crafting the Saffron Risotto

  1. Begin by gently warming the chicken or vegetable broth in a saucepan, maintaining a delicate simmer. Concurrently, immerse the saffron threads in 2 tablespoons of this warm broth, allowing their essence to bloom.
  2. In a separate wide, heavy-bottomed pan or Dutch oven, unite 1 tablespoon of olive oil with 1 tablespoon of butter over a medium flame. Introduce the finely minced shallot, coaxing it to translucence for 3-4 minutes. Follow with half of the minced garlic, allowing it to become fragrant for precisely 1 minute.
  3. Incorporate the Arborio rice into the pan, stirring continuously for 2 minutes until the edges of each grain shimmer with translucence. Pour in the dry white wine, stirring patiently until its spirited aroma entirely dissipates, fully absorbed by the rice.
  4. Embark on the methodical addition of warm broth, one ladleful at a time. Stir with graceful persistence until each increment is almost entirely absorbed before introducing the next. This meditative process spans approximately 20-25 minutes. Integrate the steeped saffron liquid halfway through.
  5. Continue the broth additions until the rice achieves a luxuriously creamy texture while retaining a subtle al dente bite. Withdraw the pan from the heat. Fold in 1 tablespoon of butter, the grated Parmesan cheese, and the heavy cream, stirring until impeccably combined. Season judiciously with salt and freshly ground black pepper. Cover to preserve its warmth and exquisite texture.

The Art of Seared Scallops

  1. Prepare the large sea scallops by patting them exceedingly dry with paper towels—this meticulous step is paramount for an exemplary sear. Season them generously with salt and freshly ground black pepper.
  2. Heat a robust cast-iron skillet over an intensely high flame until it just begins to waft a wisp of smoke. Introduce 1 tablespoon of olive oil. With precision, arrange the scallops in a single, uncrowded layer within the searing heat. Achieve a profound golden-brown crust and opaque center by searing for 1.5-2 minutes per side. Gently remove the impeccably seared scallops from the pan.

The Bright Lemon Butter Sauce & Elegant Assembly

  1. While the scallops achieve their perfect sear, in a small saucepan over a gentle, low heat, melt the remaining 2 tablespoons of butter. Infuse it with the remaining minced garlic, the fragrant lemon zest, and the bright lemon juice. Whisk until harmoniously combined and subtly warmed. Adjust seasoning with salt and pepper.
  2. Stir the fresh, finely chopped parsley into the prepared saffron risotto, infusing it with vibrant green and fresh aroma.
  3. Present the vibrant saffron risotto as a sophisticated foundation. Crown it with the perfectly seared scallops, then bestow a generous drizzle of the luminous lemon butter sauce. Serve without delay to capture the peak of flavor and texture.
